Massaged Kale Salad

Making this kale salad is a bit like doing a magic trick. Just massage lemon juice, salt and oil into raw kale leaves. In a few minutes, they'll look cooked.

How to Make Cauliflower Fried Rice


  • 2 bunches of kale, rinsed and dried, ribs and stems removed and leaves thinly sliced crosswise
  • 2 lemons, zested and juiced
  • 2 tablespoons olive oil
  • Kosher salt
  • Freshly ground black pepper

How to make this recipe

  1. Place the kale in a large bowl and toss with the lemon juice juice and zest, olive oil, salt and pepper. Massage the mixture with your hands until the kale is well-coated and just beginning to wilt. Adjust seasoning and serve.

Serve With

Grilled chicken, salmon or steak.
