Co-owner Julio Bermejo makes his margaritas with neutrally flavored agave nectar—a natural honey-like sweetener from the same plant as tequila—in place of triple sec. It's available at natural food stores and online.

  1. 1 lime wedge
  2. Kosher salt
  3. Ice
  4. 2 ounces reposado tequila
  5. 1 ounce fresh lime juice
  6. 1/2 ounce agave nectar or juice
  1. Moisten the outer rim of a rocks glass with the lime wedge and coat lightly with salt. Fill a cocktail shaker with ice. Add the tequila, lime juice and agave nectar, shake well and strain into the rocks glass.
