At Bar High Five, Hidetsugo Ueno stores spirits at various temperatures to ensure the optimum texture and temperature of each drink. He keeps the bourbon for his Manhattans at -4 degrees Fahrenheit. (You can achieve a similar effect by chilling bourbon in the freezer for a day.)

  1. Cracked ice
  2. 1 1/2 ounces frozen overproof bourbon
  3. 1/2 ounce sweet vermouth
  4. 1/2 teaspoon Carpano Antica Formula (sweet Italian vermouth)
  5. 1 maraschino cherry, for garnish
  1. Fill a pint glass with cracked ice. Add the bourbon, vermouth and Carpano Antica Formula and stir well. Strain into a chilled coupe and garnish with the cherry.
