The staff at Brooklyn’s Baked created this tall, fluffy cake to feed their love of malted- milk balls. Although the bakery prefers to use a brewer’s malt like the one from nearby Sixpoint Craft Ales, this recipe calls for the more readily available malted-milk powder, which has a mellow, nutty flavor.

Malt-Ball Cake

I made this cake and really loved its moist texture and sweet taste.  I would omit the nutmeg if I made this again because even at a 1/4 tsp, the taste was too strong for what I saw as a simple, classic birthday cake.  I found the recipe for the frosting a bit scary with a full pound of butter and a huge amount of chocolate. Instead, I combined 1.5 sticks of butter with 2 small containers of fluff and roughly 1.5 cups of a mix of bittersweet and milk chocolate.  My frosting was a pretty big departure from the recipe, but a slightly less sinful atlernative that still has a rich, sweet effect.
