Padma Lakshmi always makes extra portions of this excellent coconut-curried mahimahi so she can reheat it the next day and eat it over noodles, like an Asian laksa.

Aromatic, spicy curries like this one tend to overwhelm most white wines, but good Gewürztraminer from Alsace is just as fragrant, and its luscious texture is delicious with the lush coconut milk here. The 2005 vintage was terrific for Gewürz in particular, as shown in the impeccably balanced, floral 2005 Paul Blanck.

Mahimahi Coconut Curry Stew with Carrots and Fennel

This dish was delicious! I'm lucky enough to have several asian grocery stores near me to buy all the necessary ingredients, and I certianly noticed the subtle nuances of new ingredients (for me) like Kaffir lime leaves. Next time I would take advantage of some short-cuts like pre-shredded carrots. Also, I served it over an aromatic cilantro-lime rice that was the perfect compliment.
