- Tear 1 tarragon sprig and drop it into a cocktail shaker. Add ice and the gin, Cognac, lemon juice, peach puree and simple syrup and shake well. Fine-strain into a chilled coupe. Top with the Champagne and garnish with the remaining tarragon sprig.
