A perfect way to put summer veggies to use. This dish is easy and involves very little "cooking" but tastes fresh and delicious. I substituted crushed red pepper for the chili, since that's all I had on hand, and it still tasted great.

This is so simple, yet it just tastes great! A very simple healthy taste to it, and I think one of the best things I have ever made. I added fresh ground pepper and onion also. I also sauteed the onion and zucchini.

Love this dish—so easy and flavorful. I use the gourmet medley of tomatoes at the supermarket and add in some red onion.
