wine recommendation

An uncomplicated, fairly acidic and non-oaky white wine will cut through the richness of the bacon, eggs, and cheese in this dish. Either a vernaccia or a pinot bianco from Italy fits the bill.

I've been making this for a number of years now & it gets incredible raves! Feel free to use a white wine instead of the red :) Pancetta instead of bacon is fantastic

Followed the recipe exactly & was thrilled with how good this turned out. I did use a center cut bacon. Turned out perfectly - even my picky picky husband loved it!
