Lime Cubes

  • SERVINGS: Makes 1 drink

Mixologist Sebastian Reaburn serves this cardamom-accented drink two ways, depending on the weather: on hot days, mixed with ginger beer—as directed in this recipe; on cool ones, strained into a rocks glass over a single large ice cube. The second way makes the flavors more intense.

  1. 1 ounce fresh lime juice
  2. 1 ounce cold water
  3. 1/2 ounce Simple Syrup
  4. 1 kaffir lime leaf (optional)
  5. 3 cardamom pods
  6. One 2-inch strip of lime zest
  7. Ice
  8. 2 ounces chilled ginger beer
  1. In a cocktail shaker, combine all of the ingredients except ice and the ginger beer and muddle. Strain into an ice-filled highball glass and stir in the ginger beer.
