Lime Cubes

Mixologist Sebastian Reaburn serves this cardamom-accented drink two ways, depending on the weather: on hot days, mixed with ginger beer—as directed in this recipe; on cool ones, strained into a rocks glass over a single large ice cube. The second way makes the flavors more intense.
- 1 ounce fresh lime juice
- 1 ounce cold water
- 1/2 ounce Simple Syrup
- 1 kaffir lime leaf (optional)
- 3 cardamom pods
- One 2-inch strip of lime zest
- Ice
- 2 ounces chilled ginger beer
- In a cocktail shaker, combine all of the ingredients except ice and the ginger beer and muddle. Strain into an ice-filled highball glass and stir in the ginger beer.
