Maxwell Britten likes to use Pacifique green absinthe in this floral and fruity cocktail. Pacific Distillery started making Pacifique in Washington state with a 19th-century French recipe after the US worm-wood absinthe ban was lifted in 2007.

Ingredients

  • 1 ounce absinthe verte, such as Pacifique
  • 1 ounce chilled Sauvignon Blanc or other dry white wine
  • 1 ounce French blanc vermouth, such as Dolin
  • 3/4 ounce fresh grapefruit juice
  • 1/2 ounce Simple Syrup
  • Dash of orange flower water
  • Cracked ice
  • 1 grapefruit twist, for garnish

How to make this recipe

  1. In a chilled Pontarlier glass (a traditional absinthe glass) or white wine glass, combine all of the ingredients except ice and the garnish. Fill the glass with cracked ice and stir well; garnish with the twist.
