The Poire Williams (pear brandy) in this drink reminds Danish-born Krogh of a variety of pear (Clara Frijs) that his mother got every autumn from a local farm when he was a child. "It's not really fall until I can get my hands on some of these pears," he says.

  1. Ice
  2. 2 1/2 ounces oloroso sherry
  3. 3/4 ounce Poire Williams
  4. 3/4 ounce aquavit
  5. Dash of grapefruit bitters or orange bitters
  1. Fill a pint glass with ice. Add all of the remaining ingredients and stir well. Strain into a chilled coupe.
