The Poire Williams (pear brandy) in this drink reminds Danish-born Krogh of a variety of pear (Clara Frijs) that his mother got every autumn from a local farm when he was a child. "It's not really fall until I can get my hands on some of these pears," he says.

2 1/2 ounces oloroso sherry
3/4 ounce Poire Williams
3/4 ounce aquavit
Dash of grapefruit bitters or orange bitters
How to Make It
Fill a pint glass with ice. Add all of the remaining ingredients and stir well. Strain into a chilled coupe.
