Juniper Tea Fizz

In cocktail lingo, a fizz is a drink that contains a spirit (often gin), citrus juices, sugar and club soda. The Silver Fizz is a gin fizz that includes an egg white, which adds foam and body to a shaken drink. In this Silver Fizz variation, Jennifer Colliau uses juniper-infused syrup to hint at the flavor of gin.
- 2 ounces chilled club soda
- 1 ounce fresh lime juice
- 1 ounce Juniper Syrup
- 1 large egg white
- Ice
- 2 ounces chilled brewed green tea
- 1 orchid or 1 lime wheel skewered with a juniper berry, for garnish
- In a cocktail shaker, combine the tea, lime juice, Juniper Syrup and egg white and shake well. Add ice and shake again. Pour through a fine strainer into a chilled fizz glass. Stir in the club soda; garnish with an orchid or a skewered lime wheel.
