I forgot, I did make a few other changes. I omitted the mint (I don't care for it in meat) and the sugar. We didn't miss them at all. I added a little dab of sriracha hot sauce on my meatballs, but my husband loved the sweet chili sauce.

These were delicious. I made the substitutions of soy sauce instead of fish sauce and lemon zest instead of lemongrass. It's what I had on hand. It was my 1st time using thighs in the processor. They were so moist. Will make these frequently

These were awesome. The only thing I did differently was to cut the fish sauce in half and substitute teriyaki sauce instead as many family members don't like fish. Even with half the amount I could taste the fishiness so I will eliminate it altogether next time. Everyone loved them though.

These make a great appetizer.  I make the recipe a day or two ahead so the flavors meld together.  They are so pretty set up in the lettuce wraps too.

These meatballs are really flavorful.  It's already really good without the chili sauce.  It depends on how sweet you would like it.  It's a a great hors d'ouvre.  The flavors really come together so well in this dish.
