Jicama Salsa

  1. 1 small jicama (about 1 pound), peeled and finely diced
  2. 1 1/2 tablespoons fresh lime juice
  3. 2 tablespoons finely chopped mint
  4. 1 tablespoon finely chopped cilantro
  5. 1/4 teaspoon salt
  6. Pinch of cayenne pepper
  1. In a medium bowl, combine all of the ingredients.
Notes One Quarter Cup Calories 21 kcal, Total Fat 0.05 gm, Saturated Fat 0 gm. Serve With Glazed Chicken with Jicama Salsa.
