Jerk Vegetable Cubano

Spicy vegetables plus dill pickles and melted cheese make the perfect panini.

- 1/4 cup mayonnaise
- 4 hoagie rolls, split
- 4 cups coarsely chopped Spicy Jerk Vegetables, plus leftover yogurt-scallion sauce
- 1 cup sliced dill pickles
- 1/2 pound sliced Gruyère or Swiss cheese
- Spread the mayonnaise on the cut sides of the rolls and top with the vegetables, pickles and cheese. Close the sandwiches and toast in a panini press or griddle until crusty and the cheese is melted. Cut in half and serve with the yogurt sauce.
