Smoky single-malt Scotches are almost never used in tropical drinks, but Julie Reiner was sure that one would taste great with passion fruit juice. At Lani Kai, she garnishes this swizzle with grilled pineapple, to play up the Scotch's smokiness.
In a collins glass, combine all of the ingredients except crushed ice and the garnish. Add crushed ice. Spin a swizzle stick or bar spoon between your hands to mix the drink. Garnish with the sage sprig.
