Cane syrup is richer and sweeter than simple syrup, giving this Daiquiri variation a more sophisticated flavor and velvety texture. Leo Robitschek balances the sweetness by increasing the amount of lime juice and adding a dash of Angostura bitters.
- Fill a cocktail shaker with ice. Add the rum, lime juice and cane syrup and shake well. Strain into a chilled coupe and top with the bitters.
