- 1/2 pint vanilla ice cream, softened
- 16 store-bought crisp chocolate wafer cookies
- 1/3 cup finely chopped peppermint candies or Heath bars
- Spoon a heaping tablespoon of ice cream onto half of the cookies. Cover with the remaining cookies and press gently. Pat the chopped candies onto the ice cream. Wrap the sandwiches in pairs in wax paper and freeze until ready to eat.
