Indian Summer

"I love the aroma of cardamom," says Jacques Bezuidenhout, "and it works well with the spice in tequila."
- 3 cardamom pods
- Ice
- 1 1/2 ounces blanco tequila
- 3/4 ounce Pimm's No. 1
- 1 ounce unsweetened pineapple juice
- 1/4 ounce fresh lime juice
- 1/4 ounce Simple Syrup
- 1 lime twist, for garnish
- In a cocktail shaker, lightly muddle the cardamom. Add ice and all of the remaining ingredients except the garnish and shake well. Double strain into a chilled coupe; garnish with the twist.
