  • 2 tablespoons soy sauce
  • 2 tablespoons dry sherry
  • 1/4 cup plus 1 tablespoon good-quality hoisin sauce
  • 2 tablespoons sesame seeds
  • 1 jalapeƱo chile, seeded and minced
  • 1 tablespoon sesame oil
  • 1 tablespoon curry powder
  • 1 tablespoon finely grated orange zest
  • 1 tablespoon fermented black beans (see Note)

How to make this recipe

  1. Combine all the ingredients in a medium bowl.


Fermented black beans are available at Asian markets.

Serve With

Any kind of beefsteak, lamb, duck: marinate 1 to 3 hours.
