Horse Tonic

Mixologist Richard Boccato invented the Horse Tonic as a hangover remedy in the vein of mid- to late-19th-century "bracers" (invigorating alcoholic drinks) like the Saratoga Brace Up. "This style of drink became popular with the advent of widely available charged [sparkling] water," he says.

- 1 1/2 ounces dark rum, preferably Gosling's Black Seal
- 1/2 ounce dark rum, preferably Cruzan Black Strap
- 1/4 ounce Velvet Falernum (clove-spiced liqueur)
- 3/4 ounce fresh lemon juice
- 1/2 ounce Simple Ginger Syrup
- 1 large egg white
- Ice
- 1 ounce chilled club soda
- Pinch of ground espresso and 1 orange twist, for garnish
- In a cocktail shaker, combine the rums, Velvet Falernum, lemon juice, Simple Ginger Syrup and egg white and shake well. Add ice and shake again. Strain into a chilled fizz glass, stir in the club soda and garnish with the espresso. Pinch the orange twist over the drink and drop it in.
