While spelt may be tolerated by some people who are sensitive to gluten, it is not safe for those diagnosed with celiac disease. We regret the error and are changing the recipe headnote. Thanks so much to our readers for pointing this out. If you can tolerate gluten and want to eat more whole grains, please try this bread. It's delicious!

The recipe calls for 'whole wheat spelt flour'. Gluten is the protein in wheat. Celiacs cannot ingest gluten in any amount or form. It is clear that the author and Food & Wine editor made a grievous and dangerous error in proclaiming this recipe as good for celiacs. F&W should immediately take this article and recipe off-line and issue a retraction. I'm disappointed in F&W. zero stars

I agree with the previous comment. Spelt is wheat and as such contains gluten. for persons with celiac disease this causes famage to the intestine and can increase risk of cancers and other adverse health conditions. The FDA has defined "Wheat" as any species - including SPELT. The FDA further proposes to define gluten as the proteins from wheat, rye, barley and all hydrids of these grains. Ms. Vatinet needs to become educated about what grains can safely be used by persons with all forms of gluten intolerances. The message with this recipe is very dangerous. The bread may be good - but it is NOT safe for people with Celiac disease. Spelt contains gluten proteins which trigger the immune response in people with CD. Next time, F&W might want to check with a Registered Dietitian who SPECIALIZES in food intolerance before attaching nutrition safety advice.
