Honey-Broiled Figs with Ricotta

Richard Betts doesn't love baking. "It's too precise for me," he says. "I don't play well with exact measurements. Plus, I don't want to get in the way of great fall figs." Topped with fresh ricotta and honey, the figs spend only 2 minutes under the broiler.

  • 1 cup fresh ricotta
  • 2 tablespoons honey, plus more for drizzling
  • 12 large Black Mission figs, halved

How to make this recipe

  1. Preheat the broiler and position a rack 6 inches from the heat. In a food processor, combine the ricotta with the 2 tablespoons of honey and puree until very smooth.

  2. Arrange the figs cut side up on a rimmed baking sheet. Dollop 2 teaspoons of the ricotta puree on each fig and lightly drizzle with honey. Broil for about 2 minutes, until just browned in spots and the ricotta is barely melted; serve warm or at room temperature.
