Homemade Peanut Butter with a Side of Bacon

Ingredients

  1. 1 pound sliced bacon
  2. 2 cups unsalted roasted peanuts
  3. 1/4 cup plus 2 tablespoons vegetable oil
  4. 1 tablespoon honey
  5. Salt
  1. In a large nonstick skillet, cook the bacon in batches over moderate heat until crisp, about 10 minutes per batch. Transfer to paper towels to drain and let cool completely.
  2. Meanwhile, in a food processor, blend the peanuts with the oil until very smooth. Add the honey, season with salt and pulse to combine. Serve with the bacon.
