Hawaiian Room

According to Jeff Berry, this drink was served in New York City in the 1940s at the Hotel Lexington's Hawaiian Room. It's the only tropical cocktail Berry has encountered that uses applejack (American Apple brandy). Berry prefers Laird's Applejack, which the Laird family has been making in New Jersey since 1698.

Ingredients

  • Ice
  • 1 ounce white rum
  • 1/2 ounce Apple brandy, preferably bonded
  • 1/2 ounce Cointreau or other triple sec
  • 1/2 ounce unsweetened pineapple juice
  • 1/2 ounce fresh lemon juice

How to make this recipe

  1. Fill a cocktail shaker with ice. Add all of the remaining ingredients and shake well. Strain into a chilled coupe.
