The late Ngiam Tong Boon of Raffles Hotel in Singapore, who's credited with inventing the Singapore Sling around 1915, might be flattered by beverage director John Deragon's fall fruit–based update of the classic tropical cooler.

Ingredients

  • 3/4 ounce sweet vermouth
  • Ice
  • 1 1/2 ounces apple brandy, preferably bonded
  • 3/4 ounce fresh lemon juice
  • 1/2 ounce Bénédictine (brandy-based herbal liqueur)
  • 1/2 ounce Cherry Heering or other cherry liqueur
  • 1 1/2 ounces chilled ginger beer
  • 1 brandied cherry
  • 1/4 orange wheel

How to make this recipe

  1. Fill a cocktail shaker with ice. Add all of the remaining ingredients except the ginger beer, cherry and orange wheel and shake well. Strain into an ice-filled collins glass. Stir in the ginger beer. Skewer the brandied cherry and the orange wheel on a pick and garnish the drink.
