Hand-Cut Orange-and-Lemon Marmalade
Kenny Rochford's mother made a lot of marmalade when he was growing up. "As a kid, it would bore me to tears, because she would spend whole weeks canning hundreds and hundreds of jars of it," he says. "But I've got the bug myself now." The best results, he advises, come from patiently waiting for the marmalade to set up on its own rather than adding pectin.
