Half-Moon Cocktail

Genever is a clear distilled spirit from Holland that's typically made from a mixture of malted grains flavored with juniper (the key flavoring in gin). It's often compared to good single-malt whiskey. Pineapple gum syrup is available at smallhandfoods.com.
- Ice
- 1 1/2 ounces genever, preferably Bols
- 3/4 ounce fresh lemon juice
- 2 green cardamom pods
- 1 1/2 ounces Prosecco or other sparkling wine
- 3/4 ounce pineapple gum syrup (thickened pineapple-flavored Simple Syrup)
- Dash of Angostura bitters
- Fill a cocktail shaker with ice. Add the genever, lemon juice, gum syrup and cardamom pods and shake well. Strain into a chilled coupe and stir in the Prosecco and bitters.
