Haitian Apricot

  • SERVINGS: makes 1 drink

Provence • Manhattan

Bar manager Tom Jowett picks up seasonal ingredients for his cocktails at the farmers' market each week. Last summer he sweetened fresh apricots with honey, but apricot preserves can be substituted for the fresh fruit.

  1. Ice
  2. 2 ounces amber rum
  3. 3/4 ounce fresh lime juice
  4. 1/2 ounce Honey Syrup
  5. 1/4 ounce Apricot brandy
  6. 1 teaspoon apricot preserves
  1. Fill a cocktail shaker with ice. Add all of the remaining ingredients and shake well. Strain into a chilled martini glass.
