Ingredients

  • 4 large slices coarse peasant bread
  • Extra-virgin olive oil
  • 4 teaspoons zahtar (see Note)
  • Salt and freshly ground black pepper
  • Crushed red pepper
  • Diced beefsteak tomatoes

How to make this recipe

  1. Light a grill. Generously brush the bread with olive oil and sprinkle each slice with 1 teaspoon of the zahtar. Season with salt, black pepper and crushed red pepper. Grill the bread over a medium-hot fire, turning once, until nicely browned and crisp, 1 to 2 minutes per side. Top with diced tomatoes and serve.

Notes

Zahtar is available at Middle Eastern markets and specialty food shops. You can order it by mail from Penzeys Spices (414-679-7207).
