How to Poach Eggs in a Strainer


  • 4 large slices coarse peasant bread
  • Extra-virgin olive oil
  • 4 teaspoons zahtar (see Note)
  • Salt and freshly ground black pepper
  • Crushed red pepper
  • Diced beefsteak tomatoes

How to make this recipe

  1. Light a grill. Generously brush the bread with olive oil and sprinkle each slice with 1 teaspoon of the zahtar. Season with salt, black pepper and crushed red pepper. Grill the bread over a medium-hot fire, turning once, until nicely browned and crisp, 1 to 2 minutes per side. Top with diced tomatoes and serve.
