Grilled Halloumi Cheese

  1. 2 pounds halloumi cheese, sliced 1/2 inch thick
  2. Olive oil
  3. Red bell pepper, diced
  4. Pine nuts, toasted
  5. Basil, chopped
  1. Brush the halloumi with olive oil. Grill until browned, 2 minutes per side. Top slices with olive oil, red bell pepper, pine nuts and basil.
