This was good, quick and easy. I ended up using bottled pesto because the amount I was trying to make (half) wouldn't blend right. My husband put smoked fontina cheese on one of his and it was delicious! From now on I'll just use whatever cheese I have in the house.

These little sandwiches were DELICIOUS! Way too much zucchini in my garden—this is great even when you think you just can't eat another squash. This only takes a couple of minutes to pull together too! Perfection!

I made this yesterday open faced and cut it up in small pieces for an appetizer. Even though I grilled the zucchini indoors (due to torrential downpours) and then melted the cheese in the oven, it still turned out great. I would add a little less oil for the pesto and a little more of the hot smoked paprika though.
