Green Salad with Italian Vinaigrette

Garlic and fresh parsley make this the best-ever version of an old-fashioned pizza parlor salad.

  1. 1/4 cup extra-virgin olive oil
  2. 3 tablespoons red wine vinegar
  3. 1 garlic clove, minced
  4. 1 tablespoon chopped parsley
  5. 1 teaspoon dried oregano
  6. 1 teaspoon Italian seasoning
  7. Salt and freshly ground pepper
  8. 1 head of Boston lettuce, torn
  9. 4 cups mesclun (4 ounces)
  10. 1 cucumber—peeled, seeded and cut into thin half-moons
  11. 1 pint cherry tomatoes, halved
  1. In a bowl, blend the oil, vinegar, garlic, parsley, oregano and Italian seasoning. Season with salt and pepper.
  2. In a large bowl, toss the remaining ingredients with the vinaigrette and serve.
