This sprawling restaurant serves Greek-inspired spins on familiar cocktails—like this mojito made with Muscat-sweetened Metaxa brandy in place of rum.

4 mint sprigs
2 teaspoons brown sugar
1/2 ounce fresh lime juice
1 1/2 ounces Metaxa
1/2 ounce fresh lemon juice
Ice
1 ounce chilled club soda

In a cocktail shaker, muddle the mint with the brown sugar and lime juice. Add the Metaxa, lemon juice and ice. Shake well and strain into an ice-filled highball glass. Top with the club soda.
