Grapes of Wrath

Leo Robitschek ingeniously muddles Concord grapes with simple syrup to release their sweet, tangy, fragrant pulp. He pours the muddled grapes over a swizzle of mezcal, sherry and Barolo Chinato, a spiced fortified red wine that enhances the drink's grapey flavor.

Ingredients

  • 1 ounce mezcal
  • 3/4 ounce fino sherry
  • 3/4 ounce Barolo Chinato
  • 3/4 ounce fresh lemon juice
  • 1/2 ounce Vanilla Simple Syrup
  • Crushed ice
  • 15 Concord grapes
  • 1/4 ounce Simple Syrup

How to make this recipe

  1. In a chilled highball glass, combine the mezcal, sherry, Barolo Chinato, lemon juice and Vanilla Simple Syrup. Fill the glass with crushed ice and mix by spinning a swizzle stick or bar spoon between your hands. In a mixing glass, muddle the grapes with the Simple Syrup and pour over the drink.
