Bartender Sam Ross prepares this drink with Laird's bonded (100 proof) apple brandy because of the spirit's intense flavor. Twenty pounds of Virginia apples go into each 750-milliliter bottle.

1 ounce apple brandy, preferably bonded
1 ounce bourbon
1 ounce Carpano Antica Formula or other sweet vermouth
Dash of Angostura bitters
Dash of Peychaud's bitters
3 brandied cherries
How to Make It
Fill a pint glass with ice. Add all of the remaining ingredients except the cherries; stir well. Strain into a chilled coupe and garnish with the cherries.
