- 1 teaspoon vegetable oil
- 1/2 medium onion, finely chopped
- 1 1/2 cups long-grain white rice
- 1 teaspoon turmeric
- 1 bay leaf
- Small pinch of saffron (optional)
- Heat the oil in a medium saucepan. Add the onion and sauté over moderate heat until translucent, about 2 minutes. Add the rice, turmeric, bay leaf and saffron and stir until the rice is coated. Add 3 cups of water, season with salt and bring to a boil. Stir the rice, cover and simmer over low heat until the rice is tender, about 17 minutes. Discard the bay leaf and serve.
