Goat Cheese–Stuffed Mushrooms with Bread Crumbs

These are always a huge hit at any dinner party for me. I have served them as a formal appetizer at a wine pairing dinner. Served with Nora AlbariƱo which is lighter white wine and contrasted beatifully with the earthiness of the mushrooms and comlimented the creaminess of the goat cheese. Use very large mushrooms, a high quality goat cheese, a little more seasoning in the breadcrumbs, a perhaps a little lemon zest to add some fresheness.

I thought these were a little bland. I put way more breadcrumbs on top to give more flavor and texture.

I liked this recipe but need to be sure to use very large mushrooms as they shrink considerable
