2 medium cucumberspeeled, halved lengthwise and seeded
1 tablespoon unsalted butter
Salt and freshly ground pepper
Slice the cucumbers on the diagonal 1/4 inch thick. Melt the butter in a large skillet. Add the cucumbers, season with salt and pepper and cook over moderately high heat, stirring occasionally, until tender, 5 to 7 minutes.
The cucumbers can stand at room temperature for 3 hours. Rewarm before serving.
