- 2 medium cucumberspeeled, halved lengthwise and seeded
- 1 tablespoon unsalted butter
- Salt and freshly ground pepper
- Slice the cucumbers on the diagonal 1/4 inch thick. Melt the butter in a large skillet. Add the cucumbers, season with salt and pepper and cook over moderately high heat, stirring occasionally, until tender, 5 to 7 minutes.
