I made these and agree that 20 minutes is too long, with some experimentation, 11 minutes were perfect for a good moist, chewy texture. I gave them out to friends who loved them, and last night I went to see Harry Connick Jr. in Boston and gave him some during the show. He ate one onstage and said it was "the best cookie I have ever eaten" and then proceeded to ask me the ingredients (in front of the audience)! I really love the flavar and texture of the cookies, the lemon in the cream filling is just the right amount to compliment the spicy ginger flavor. I recommend doubling, or tripling the recipe as it does not yield many cookies.

I just tried making these. The 20 minute bake time is WAY too long, unless you want really dark, really crisp cookies. I first cut it down to 16 minutes, which was still much too long. I finally settled on 10 minutes total. Even then, the cookies are flatter and darker than the ones pictured. (FYI my oven temp is fine, unless the new oven thermomenter is inaccurate)
