Ginger Persuasion

Kathy Casey's friend Anu Apte, owner of Rob Roy in Seattle, created this unconventional drink with dry, slightly tannic sparkling Pinot Noir and sweet blueberries, honey and ginger liqueur. The red wine looks gorgeous floating on the bluish-beige cocktail.

How to Poach Eggs in a Strainer


  • 4 blueberries
  • Ice
  • 1 ounce vodka
  • 1/2 ounce ginger liqueur
  • 1/2 ounce aquavit
  • 1 tablespoon honey, preferably lavender honey
  • 2 dashes of Angostura bitters
  • 1 ounce sparkling Pinot Noir or other red sparkling wine

How to make this recipe

  1. In a cocktail shaker, muddle the berries. Add ice and the vodka, ginger liqueur, aquavit, honey and bitters and shake well. Pour through a fine strainer into a chilled flute and float the sparkling wine on top.
