Ginger-Infused Vodka

- 4 ounces fresh ginger, peeled and diced
- 1 cup vodka
- In an airtight container, cover the ginger with the vodka. Refrigerate for 3 days, then strain into another container. Refrigerate for up to 2 weeks.
