Ginger-Habanero Syrup

  1. 1 halved seeded habanero chile
  2. 1 cup sugar
  3. 1 cup water
  4. 2 ounces fresh ginger, sliced
  1. In a small saucepan, combine the water, sugar, ginger and habanero. Bring to a boil over moderately high heat, stirring to dissolve the sugar, about 3 minutes. Let cool completely, then discard the habanero. Strain the syrup into a jar, cover and refrigerate for up to 3 weeks.
