- 1 halved seeded habanero chile
- 1 cup sugar
- 1 cup water
- 2 ounces fresh ginger, sliced
- In a small saucepan, combine the water, sugar, ginger and habanero. Bring to a boil over moderately high heat, stirring to dissolve the sugar, about 3 minutes. Let cool completely, then discard the habanero. Strain the syrup into a jar, cover and refrigerate for up to 3 weeks.
