Ginger Gastrique

Mixologist Jonny Raglin uses this gingery gastrique to make the Steve McQueen, a non-alcoholic twist on a classic cocktail, the Sidecar.

  1. 1/2 cup minced fresh ginger
  2. 4 ounces apple cider vinegar
  3. 2 ounces sherry vinegar
  4. 2 ounces water
  5. 1 cup sugar
  1. In a small saucepan, bring ingredients to a boil. Stir in sugar and simmer for 20 minutes. Fine-strain into a heatproof jar. Let cool, and refrigerate for up to 2 weeks.
