Gin-Esaisquoi

This drink, which gets its frothy texture from being shaken with an egg white, was named for bartender Jeff Grdinich's best friend, Kevin Ginestet, who, ironically, is allergic to eggs and doesn't drink alcohol.
- 1 large egg white
- 1 1/2 ounces gin
- 1 1/2 ounces Lillet blanc
- 3/4 ounce Velvet Falernum (clove-spiced liqueur)
- 2 dashes of orange bitters, preferably Regan’s
- Ice
- Pinch of ground cardamom
- In a cocktail shaker, combine all of the ingredients except the ice and cardamom and shake for 10 seconds. Add ice and shake for 10 more seconds. Strain into a chilled coupe and sprinkle with the cardamom.
