This drink, which gets its frothy texture from being shaken with an egg white, was named for bartender Jeff Grdinich's best friend, Kevin Ginestet, who, ironically, is allergic to eggs and doesn't drink alcohol.
In a cocktail shaker, combine all of the ingredients except the ice and cardamom and shake for 10 seconds. Add ice and shake for 10 more seconds. Strain into a chilled coupe and sprinkle with the cardamom.
