"Eau-de-vie can be a challenging spirit to work with," says Julie Reiner, who owns Manhattan's Flatiron Lounge and the Clover Club in Brooklyn. "It can add a lot of depth to cocktails, but it's also very intense, so I like to pair it with other aromatic spirits." In this fragrant, crystal-clear cocktail, Reiner matches apricot eau-de-vie with juniper-scented gin.
- 1 lemon twist
- Ice
- 3/4 ounce Martini Bianco vermouth (see Note)
- 2 dashes orange bitters
- 3/4 ounce apricot eau-de-vie
- 1 1/2 ounces Plymouth gin
- Fill a pint glass with ice. Add the gin, eau-de-vie, vermouth and bitters and stir well. Strain into a chilled coupe and garnish with the lemon twist.
