Fresh Tomato Salsa

  1. 3/4 pound tomatoes, coarsely chopped
  2. 3 tablespoons coarsely chopped flat-leaf parsley
  3. 3 tablespoons coarsely chopped mint
  4. 1 serrano or jalapeño chile, seeded and minced
  5. 1 garlic clove, minced
  6. 2 tablespoons fresh lime juice
  7. 2 tablespoons olive oil
  8. Salt
  1. In a medium bowl, stir together the tomatoes, parsley, mint, chile and garlic. Stir in the lime juice and olive oil and season with salt.
