During the winter, the bartenders at Volterra make this thyme-accented drink with blood oranges in place of grapefruit.

  1. Ice
  2. 4 ounces club soda
  3. 1 1/2 ounces peach nectar
  4. 1 ounce cranberry juice
  5. 3/4 ounce fresh grapefruit juice
  6. 1/2 ounce fresh lime juice
  7. 1/2 ounce Simple Syrup
  8. 2 dashes of Angostura bitters
  9. 2 thyme sprigs
  1. Fill a cocktail shaker with ice. Add all of the remaining ingredients except 1 thyme sprig and shake well. Strain into an ice-filled highball glass and garnish with the remaining thyme sprig.
